Bourgogne Chardonnay Paul Pillot 2023

There is nothing remotely generic about this Bourgogne Chardonnay. It carries the same sense of restraint and precision found throughout Thierry Pillot’s wines, opening with lemon oil, white peach and crisp pear before quieter notes of white flowers, hazelnut and struck stone emerge. The palate is finely textured rather than overtly rich, with pure citrus and orchard fruit framed by bright acidity and a cool mineral tension. Subtle lees and oak influence bring shape through the middle without obscuring the fruit, while the finish tightens around lemon peel, chalk and a gently saline edge. It has the poise of a wine from considerably further up the Burgundy hierarchy.

Based in Chassagne-Montrachet, Domaine Paul Pillot is now led by Thierry Pillot, one of the Côte de Beaune’s most sought-after growers. His approach favours earlier picking, restrained élevage and transparency of site over richness or obvious oak. That philosophy makes this Bourgogne particularly compelling: it offers a genuine introduction to the domaine’s style rather than simply acting as an entry-level bottling. Refined enough to drink on its own, but particularly good with shellfish, grilled fish, roast chicken or lighter cream-based dishes.
