The bouquet unfolds gradually, moving through ripe orchard fruit, yellow plum and candied citrus into toasted hazelnut, brioche, honey and subtle spice. There is considerable concentration on the palate, but nothing feels heavy; layers of fruit and pastry are drawn together by fine acidity, chalky tension and an exceptionally delicate mousse. With air, notes of citrus oil, almond and warm toast emerge, leading into a long, resonant finish that balances maturity with remarkable freshness.

Created in honour of the house's founder, Nicolas François Billecart, this prestige cuvée is produced only in exceptional vintages. The 2012 brings together Pinot Noir and Chardonnay sourced from Grand and Premier Cru vineyards, with partial vinification in oak adding further dimension without obscuring the wine's precision. Extended cellar ageing gives the Champagne its remarkable integration and complexity. Already compelling, it has the structure and energy to develop beautifully in bottle – a serious, gastronomic expression of the Billecart-Salmon style.
