Billecart Salmon Le Reserve NV

The nose moves from crisp pear and golden apple into lemon zest, white flowers and freshly baked brioche, with touches of almond and chalk emerging as it opens. On the palate, the mousse is exceptionally fine, giving a creamy impression without sacrificing freshness. Orchard fruit and citrus sit alongside subtle pastry notes and a cool mineral thread, before a long, poised finish that feels both generous and precise.

Le Réserve is the signature non-vintage cuvée of the historic family-owned Champagne house Billecart-Salmon. Built around Pinot Meunier, Chardonnay and Pinot Noir, with a significant contribution from reserve wines, it is matured extensively in the house's cellars before release. The result is less about overt richness and more about finesse, balance and texture – a beautifully judged Champagne that works effortlessly as an aperitif but has enough substance and complexity for the table.
