Billecart Salmon Le Blanc de Blancs NV

Pure, crystalline and beautifully understated, Le Blanc de Blancs shows Billecart-Salmon at its most precise. The nose begins with lemon blossom, fresh citrus and crisp green apple before revealing white peach, chalk and a delicate suggestion of brioche. On the palate it is wonderfully fine and energetic, with Chardonnay’s natural tension carried by an exceptionally delicate mousse. Citrus and orchard fruit give way to touches of almond and pastry, while a distinctly chalky, saline character drives the wine towards a long, cool and remarkably elegant finish.

Made exclusively from Chardonnay sourced from four Grand Cru villages in the Côte des Blancs – Avize, Chouilly, Cramant and Mesnil-sur-Oger – this cuvée is assembled from two different years to capture both freshness and depth. The house deliberately blends fruit from these contrasting chalk-rich terroirs to create a Blanc de Blancs that values harmony over sheer power. Refined enough for an aperitif but with the mineral structure for oysters, shellfish and fine seafood, it is a particularly accomplished expression of Billecart-Salmon’s restrained house style.
