Wiston Estate Cuvée 2015 is made from a blend of 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier. Each variety is gently pressed in a traditional coquard press before being fermented in aged Burgundian oak barrels. They were rested on lees until spring, then blended and fermented again in-bottle for a cool, slow three years. Golden amber in colour, exuding a fragrant nose of English Orchard fruits, nectarine and spice. The palate is typically Wiston, with bracing acidity and complex notes of baked apple, nectarine and runny honey layered with a rich, caramelized pastry finish. A truly gastronomic wine to be savoured on it’s own and one that will age gracefully, if you can resist!
“Bravo to Wiston (and all the other producers who do it) for putting the disgorgement date and dosage on the back label. Golden colour. Fine sparse bead but very tight and sharp. Very toasty nose. The barrel ageing has made a huge impact on this wine, nose and palate. It’s rich and spicy, deeply golden in flavour, grilled brioche, golden peaches, satsumas and saffron. It rolls across the tongue like trumpet and drum, silvery notes slipping through old gold, intent, piercing. A very, very sophisticated sparkling wine.” – Tamlyn Currin, JancisRobinson.com on Wiston Estate Cuvée 2015 release.
