This organic and biodynamic Pinot Grigio has been made using the ramato method, traditionally favoured in northern Italy. It involves a short amount of contact between grape juice and skins, which gives the wines a subtle copper-pink hue. It’s not really a white wine, nor quite rosato, nor totally an orange wine – but very much its own particular style. That skin contact gives some texture as well as the colour, and added flavour. This certainly isn’t your average, watery Pinot Grigio.The grapes are grown in Cantina Orsogna’s organic vineyards, 500 metres up in the Maiella hills, and fermented very naturally using wild yeast. The ramato method renders big aromas of peaches and wild flowers, then fresh, fruity and intense to taste. Drink with seafood, especially full-flavoured sauces and meaty fish like cod.
