Made entirely from Folle Blanche which is known as Gros Plant in the region. It’s a bit of a precious grape variety that can rot very easily in wet conditions and is therefore always picked very early. This leads to a fresh, dry wine with super acidity that makes the mouth water. Aged on its lees for added complexity this really is a steal for under a tenner. Perfect on its own or with lobster-or somewhere in between.
