The idea for this wine was to make a sort of Super Tuscan style wine but from the Langhe instead of Tuscany. It is a wine of power and elegance. As a blend of 1/3 Nebbiolo, 1/3 Cabernet Sauvignon and 1/3 Merlot, you would expect the latter two varieties to dominate, however, the Nebbiolo truly shines over the top of both of them. The nose immediately indicates the floral nature of Nebbiolo, the body through the mouth speaks of the density and depth of flavour of the other two varieties, but the finish is a tannin kick that will allow the wine to age just like a good Barolo or Babaresco. Because of the timing of ripening being diverse, the three varieties for this wine are fermented separately in small open fermenters using natural yeast. Once fermentation is complete, the wine is pressed and racked for malic fermentation in barrique, of which 30% is new French oak. The wine will spend approximately 16 months in barrique. The bottling is done without fining or filtration.
