Fernando de Castilla Fino ‘En Rama’ is bottled straight from barrel un-filtered and un-fined to retain it’s complexity. Straw yellow in colour with prominent yeast, apple and almond aroma’s on the nose. Intensely nutty and savoury on the palate with a distinct character of fresh bread and a salty tang. Dry with a bitter twist on the finish, this is best served between 6-8 degrees C. Fernando de Castilla Fino En Rama is a classic pairing with salted almonds, fish or charcuterie.
“As briney as their Classic Manzanilla but more pungent. Smells of seashells and something like heather honey though of course it is bone dry. Dusty/musty in a good way (ie nothing to do with TCA). Creamy and deep on the palate but still zestily dry. Long yeasty finish. Very good. Flavour goes on and on.” – 17 points, Jancis Robinson
