Packed full of bright, tangy dark-stone fruits with a twist of herbaceous and earth notes. The finish is medium to long, with a chalk driven minerality. No need to wait, this is delicious now and such a good foodie wine.As with all of Daves wines, this is made with gentle extraction and focus on the aromatics personality in preference to colour and tannin. Open fermented with wild yeast, and aged for 8 months in 10 year old barriques. The bottling is done without fining or filtration.
