Kilchoman PX Sherry Cask 2021 is a very special, limited edition bottling drawn from a combination of 33 casks, 9 only fully matured in Pedro Ximnénez, as well as 24 PX casks which were finished for a period of 12 to 18 months.
Bottled at a strength of 47.3% abv, Kilchoman PX Sherry cask perfectly balances the rich sweet flavours of Pedro Ximénez sherry, alongside Kilchoman’s distinct maritime Islay Peat Smoke and citrus characteristics. The nose is brimming with rich blackberries and redcurrant fruits, layered alongside zesty orange, sweet syrup and dried fruit notes. This follows through onto a textbook Kilchoman palate exhibiting rich dark honey, layers of mixed berries and a luscious sweet caramel finish. An extraordinary dram worthy in any collection.
“Pedro Ximénez casks aren’t always the easiest to work with. That was why we decided on a combination of full maturation and finishing, to balance the distinct PX influence with that of our spirit. I’m delighted with the result; big and bold but with a delightful poise and balance of flavour,” – Anthony Wills, Kilchoman Founder.
Founded in 2005, Kilchoman was the first distillery to be built on Islay in over 124 years. and is the only distillery on Islay to produce . Their 100% Islay philosophy represents the revival of single farm, Single Malt whisky making. This philosophy stems from the families desire to resurrect the grass roots tradition of farm distilling, harvesting approximately 2,000 acres of farmland located around the distillery. They also employ a flock of black faced sheep to graze the land!
