Made from sweet plums “ume” in Japanese and macerated in Ginjo sake for 6 months and then aged in enamel tanks for 2 years. The end result is a sweet sake with a bouquet and palate full of sticky plum, confit cherry, honey and almond characteristics. Well-balanced between acidity and sweetness, this has a long finish that reveals red apple and quince fruits. Serve chilled from the fridge on it’s own or in a cocktail. Bizarre, yet so deliciously irresistible!
